Tutto Mare is a new fine-dining, Southern Italian restaurant located in the Royal Poinciana Plaza in Palm Beach. Part of the acclaimed Tutto il Giorno restaurant group, Tutto Mare brings the spirit of Italian coastal cuisine to South Florida — sophisticated yet warm, stylish yet welcoming.

Our kitchen celebrates fresh seafood, handmade pastas, and seasonal Italian ingredients, presented with precision and artistry. We are assembling an exceptional culinary team under the leadership of veteran Neapolitan chefs Carmine Nozzolino and Agostino Petrosino to deliver a world-class dining experience in Palm Beach's most anticipated new restaurant.

Position Summary

The Sous Chef will work directly with the Executive Chef to oversee daily kitchen operations, maintain consistency and excellence in all dishes, and help lead a talented culinary team. This role requires strong leadership, refined technique, and the ability to balance creativity with operational discipline in a high-volume fine-dining setting.

Key Responsibilities

  • Assist in menu execution, daily specials, and seasonal updates in collaboration with the Executive Chef
  • Supervise and train kitchen staff across all stations to ensure consistency, speed, and quality
  • Manage daily prep and service flow, maintaining organization and communication throughout the line
  • Uphold all food safety, sanitation, and cleanliness standards in compliance with local regulations
  • Maintain accurate inventory and manage ordering, waste control, and vendor relationships
  • Ensure proper plating, presentation, and adherence to Tutto Mare's culinary standards
  • Support a culture of respect, teamwork, and professionalism in the kitchen

Qualifications

  • Minimum 3–5 years of experience in upscale or fine-dining kitchens, with at least 1 year in a leadership role
  • Strong foundation in Italian and Mediterranean cuisine preferred
  • Proven ability to lead and motivate a kitchen team
  • Expertise in sauces, seafood, and pasta preparation a plus
  • Excellent communication, time-management, and organizational skills
  • Ability to thrive in a fast-paced, high-standards environment
  • Must be available nights, weekends, and holidays
