POSITION SUMMARY: The Sushi Cook plays a crucial role in the preparation, cooking, and presentation of food in accordance with THE LOT's established recipes. This position requires the creation of high-quality food items while upholding proper food storage and sanitation protocols.
KEY RESPONSIBILITIES:
- Prepare and craft a diverse range of sushi, rolls, and other Japanese dishes following established recipes.
- Prepare cooking ingredients by washing and chopping vegetables and filleting fish.
- Prepare and portion essential sushi sauces, ensuring they meet quality standards and are ready for service.
- Utilize only the freshest and highest quality ingredients in all culinary creations.
- Exhibit attention to detail and creativity in the presentation of all dishes.
- Adapt to daily specials and menu modifications, learning to prepare new items as necessary.
- Coordinate food orders to guarantee timely and efficient service to guests.
- Collaborate with the kitchen team to ensure seamless operations.
- Safely and efficiently operate standard kitchen equipment.
- Restock supplies as needed throughout the shift.
- Maintain cleanliness, hygiene, and sanitation standards by keeping workstations organized and adhering to all food production codes.
- Follow uniform standards and procedures.
- Work collaboratively as a team, assisting with all guest and team member needs.
ACCOUNTABILITY: The associate is responsible for all duties associated with this position and any additional tasks as assigned.
QUALIFICATIONS:
- Demonstrated experience as a Sushi Cook or in a comparable role, with at least 2 years in a high-volume restaurant or sushi bar environment.
- Knowledge of various sushi styles, types, and preparation methods.
- Exceptional knife skills and the ability to fillet all types of fish confidently.
- Thorough understanding of kitchen preparation techniques, ingredients, and professional cooking methods.
- A valid California Food Handler's Certification.
- Familiarity with food health and safety regulations.
- Flexibility to work various shifts, including evenings, weekends, and holidays.
- Proven reliability and dependability regarding punctuality, attendance, follow-through, and the ability to work independently and efficiently.
- Willingness to learn and develop preferred skills as necessary.
- Demonstrated ability to:
