Sous Chef de Table

We are seeking a highly skilled and experienced Sous Chef to join our team at Per Se, a three-Michelin-starred restaurant located in the Deutsche Bank Center at Columbus Circle. As a key member of our culinary team, you will be responsible for overseeing the kitchen production and ensuring that all food and products are consistently prepared and served to the highest standards.
Key Responsibilities- Collaborate with the Pastry Chefs to ensure continuous improvement in quality of guest experience, service, operational effectiveness, employee retention and satisfaction.
- Supervise the team to maintain a clean, sanitary and safe work environment, and ensure that all stations/areas are clean and organized at all times.
- Communicate effectively with all team members to achieve standards and assist in achieving company objectives in sales, quality, appearance of facilities and sanitation and cleanliness.
- Prioritize daily work schedule with Chef de Parties and delegate tasks to commis and externs to gain greater efficiency.
- Develop staff in all areas of food education and prepare required paperwork in an organized and timely manner.
- Schedule labor as required by anticipated business activity and ensure that all positions are staffed when and as needed.
- Ensure that all products are received in correct unit count and condition and deliveries are performed in accordance with the restaurant's receiving policies and procedures.
- Be knowledgeable of bakery policies and administer prompt, fair, and consistent direction of employee's performance.
- Engage reports to train and mentor each other to reach their goals.
- Communicate with the Chefs on the day's progress and plan for the next day.
- Ensure that all equipment and the overall environment is kept clean and in excellent working condition.
- 3-5 years' experience in similar settings
- High School Diploma or equivalent
- State Health Certificate
- Strong interpersonal skills and ability to communicate clearly and concisely
- Ability to positively impact others and work in a fast-paced and changing environment
- Able to reach, bend, stoop and frequently lift up to 50 lbs
- Able to work in a standing position for long periods of time
- Frequent exposure to nuts, nut flour and fruit berries
