Culinary Specialist for Healthcare - PRN Rotating

Responsible for the meticulous preparation of meals for patients and cafeteria services, ensuring compliance with local, state, and federal regulations. Must strictly follow sanitation protocols as mandated by governing standards. Additional duties may be assigned as necessary.

KEY RESPONSIBILITIES

Meal Preparation


• Prepares and cooks a variety of meals and desserts for patients, cafeteria, and special events.

• Adheres to established recipes to ensure quality and consistency while meeting serving deadlines.

• Reviews daily menus and collaborates with fellow cooks regarding ingredient preparation and supply needs.

• Assists in verifying food deliveries and processing related invoices.

• Conducts inspections to ensure all items are accounted for, signing invoices for submission to the Dietary Office.

• Participates in meetings with the Director and Dietitian to discuss food service operations.

• Engages in planning sessions to evaluate progress and changes in meal production.

• Coordinates the activities of staff involved in food preparation for patients, staff, and visitors.

• Provides input for menu planning and enhancement.

• Inspects food presentation on patient tray lines and cafeteria serving areas.

• Aids in monitoring infection control and sanitation standards.

Leadership: In the absence of the Food Service Team Leader/Cook, assumes a leadership role within the department, consulting with the Clinical Dietitian as necessary.

Patient Meal Service


• Assists in serving meals on the patient tray line.

• Ensures that food presentations are visually appealing and appropriately garnished.

Sanitation Practices


• Monitors and secures all food items stored in freezers and refrigerators.

• Conducts daily inspections to ensure food is properly wrapped, labeled, and dated; assists in planning for the use of leftovers.

• Checks inventory levels in the storage area.

• Submits requisitions for food purchases and promotes effective stock rotation.

• Conducts temperature checks on food items at each meal service and submits daily reports for review.

• Maintains cleanliness and sanitation in the food production area.

• Complies with sanitation policies regarding work areas and the cleaning of kitchen equipment.

QUALIFICATIONS

Education and Training: High School diploma or GED preferred, with the ability to read and write in English to follow recipes and plan menus.

Experience : A minimum of five years in commercial food preparation is preferred.

Knowledge, Skills, and Abilities:

Demonstrates courtesy and cooperation with customers. Accepts constructive criticism gracefully. Takes responsibility and exercises good judgment when guidance is not readily available. Takes pride in delivering high-quality food products. Works effectively as part of a team.
