Culinary Specialist for Healthcare - PRN Rotating
The Culinary Specialist is accountable for the meticulous preparation of meals for patients and cafeteria services, ensuring compliance with local, state, and federal regulations. Adherence to sanitation standards is paramount. Additional responsibilities may be assigned as needed.
KEY RESPONSIBILITIES
Meal Preparation
• Prepares and cooks meals and desserts for patients, cafeteria, and special events.
• Utilizes established standardized recipes to ensure quality and consistency in food preparation, meeting serving deadlines reliably.
• Engages in menu planning, reviewing daily menus, and coordinating with fellow cooks regarding ingredient preparation and supplies.
• Assists in verifying food deliveries and processing related invoices.
• Conducts inspections to ensure all items are accounted for, signing invoices for submission to the Dietary Office.
• Participates in relevant meetings with the Director and Dietitian.
• Plans attendance to assess progress and changes in meal production.
• Oversees staff activities in the preparation and cooking of meals for patients, staff, and visitors.
• Provides input for menu development.
• Inspects the presentation of food on patient trays and cafeteria lines.
• Aids in monitoring infection control and sanitation practices.
Leadership: In the absence of the Food Service Team Leader/Cook, assumes leadership responsibilities within the department, consulting with the Clinical Dietitian as necessary.
Patient Meal Service
• Assists in serving meals on the patient tray line.
• Ensures that food plates are garnished to enhance presentation.
Sanitation Standards
• Inspects and secures all food items stored in the freezer and refrigerator.
• Conducts daily inspections to ensure food is properly wrapped, labeled, and dated; assists in planning for the use of leftover food.
• Monitors food inventory levels in the storage area.
• Submits food purchase requests to the office and promotes regular stock rotation.
• Performs temperature checks on food each meal and submits daily reports for review and documentation.
• Maintains cleanliness in the production area.
• Adheres to sanitation policies regarding the work area and cleaning of cooking equipment.
QUALIFICATIONS
Education and Training: High School diploma or GED preferred, with the ability to read and write in English to follow recipes and plan menus.
Experience : A minimum of five years in commercial food preparation is preferred.
Knowledge, Skills, and Abilities:
Demonstrates courtesy and cooperation with customers. Accepts constructive criticism gracefully. Takes responsibility and exercises good judgment when guidance is not readily available.
