Head Culinary Officer

Job Overview:


As the Head Culinary Officer at Il Forno Brands, you will be instrumental in steering the culinary team and guaranteeing the provision of exceptional, authentic cuisine.

Under the mentorship of the Executive Chef, you will oversee kitchen operations, innovate menu offerings, and uphold the highest standards of food quality and presentation.


Key Responsibilities:

Menu Development:

  • Partner with the Executive Chef to design and refresh seasonal menus that reflect the culinary ethos of Il Forno Brands.
2.

Kitchen Leadership:

  • Direct and inspire a team of kitchen professionals, fostering a positive and efficient work atmosphere.
  • Manage daily kitchen activities, including food preparation, cooking, and plating to ensure quality benchmarks are met.
3.

Quality Assurance:

  • Maintain a strong emphasis on food quality, consistency, and visual appeal.
  • Conduct regular tastings and evaluations to ensure compliance with Il Forno Brands' culinary standards.
4.

Financial Oversight:

  • Effectively manage kitchen expenditures, optimizing ingredient use and reducing waste.
  • Collaborate with the Executive Chef on inventory oversight and financial management strategies.
5.

Staff Training and Development:

  • Educate and mentor kitchen personnel, promoting a culture of ongoing improvement.
  • Facilitate regular skill enhancement sessions to elevate the team's culinary capabilities.
6.

Health and Safety Compliance:

  • Ensure adherence to health and safety regulations as well as food hygiene standards.
  • Implement and uphold rigorous kitchen sanitation protocols.

Required Qualifications:

  • Demonstrated experience as a Sous Chef or Head Culinary Officer in a respected dining establishment.
  • Culinary degree or equivalent certification.
  • In-depth knowledge of Italian culinary traditions and techniques.
  • Strong leadership and team management abilities.
  • Creativity and capacity to contribute to menu innovation.
  • Excellent communication and organizational skills.
