POSITION SUMMARY – This role involves training inmate workers in all facets of commercial cook-chill operations while ensuring adherence to facility security and safety protocols during these activities.

  • Oversee the preparation of all ingredients, ensuring the correct order of production while utilizing the master menu and standardized recipes, production sheets, weights, and measures to maintain consistent food quality.
  • Assist in the evaluation and interviewing of potential inmate candidates to ensure they meet the necessary program qualifications.
  • Ability to operate effectively in a high-pressure environment, as stressful situations may arise involving staff, inmates, and strict deadlines.
  • Regular exposure to elevated noise levels, significant standing and walking on hard surfaces, and frequent temperature fluctuations.
  • Must possess the capability to adapt to changing priorities, technology, and demanding timelines.
  • Perform additional duties as assigned by the Assistant Food Factory Director, Food Factory Director, or floor supervisors. Maintain and compile daily production records, reports, and temperature logs.
  • Instruct inmate workers on compliance with the Food Service Hazard Analysis Critical Control Point (HACCP) Plan.

QUALIFICATIONS - The required knowledge, skills, and abilities are typically acquired through a combination of education and experience equivalent to a high school diploma or GED.

  • Successful completion of a vocational training program in food service operations/cooking and/or one year of institutional or commercial cooking or production experience.
  • Completion of ServSafe certification within the first six months of employment.
  • Successful completion of Better Processing School within the first year.
  • Strong management skills are essential for effectively interacting with inmates.
