JOB OVERVIEW – This position trains the inmate workers in all aspects of bakery processes and enforces facility security and safety procedures while performing these duties. This position:

Supervises the preparation of all ingredients and is responsible for the order in which they are produced while using the master menu and standardized recipes, production sheets, weights, and measures to ensure consistent quality of food preparation. Enforces compliance with Institutional & USDA guidelines. Hires, supervises, and trains inmate workforce. Develops and maintains MCE Bakery inventory system. Is responsible for the receiving, preparation, and delivery of all bakery goods for meals to multiple institutions.

QUALIFICATIONS –

High School Diploma or GED combined with an apprenticeship under a Master Baker or 2 years Bakery experience. Applicable skills for the position are of modern principles, practices, procedures and chemistry used in large scale baking and food production techniques, proficiency in the operation, maintenance and sanitation of highly technical commercial food service equipment. Must have highly developed organizational skills. Applicants must successfully complete the 40 ServSafe Manager correspondence course within the six-month probationary period.
