Job Summary

As our Executive Chef, you'll oversee the kitchen staff in the procurement, production, preparation, and presentation of all Banquet food. You'll ensure a safe, sanitary work environment that meets all standards and regulations, while delivering profitable, competitive, and quality products.

Responsibilities
  • Manage daily production, preparation, and presentation of Banquet food to ensure a consistent, high-quality product that meets HEI Franchise standards.
  • Lead Human Resources in the production and preparation areas of the kitchen, creating a safe work environment that attracts, retains, and motivates associates. This includes interviewing, hiring, scheduling, training, developing, empowering, coaching, and counseling staff, as well as recommending performance and salary reviews, providing open communication channels, and addressing discipline and termination as needed.
  • Schedule and manage kitchen maintenance and sanitation to ensure a healthy, safe work environment that meets federal, state, corporate, and franchise standards and regulations.
  • Monitor, analyze, and control labor and food costs, preparing reports, charts, and schedules to ensure budgets are met or exceeded while maintaining quality.
  • Promote the Accident Prevention Program to minimize liabilities and related expenses.
  • Assist the Executive Chef in creating, costing, and implementing seasonal and special menus.
  • Comply with attendance rules and be available to work on a regular basis.
  • Perform other job-related duties as assigned.
  • Support banquets and events.
Qualifications
  • Two+ years of post-high school education, with culinary education preferred.
  • Five+ years of experience in a Banquet-related position.
  • Hotel experience required.
  • Advanced knowledge of food profession principles and practices, including management of people and complex problems, and food and beverage management.
  • Knowledge of hotel operations, including marketing plans, security and safety programs, personnel and labor relations, business planning, repairs, maintenance, budget forecasting, quality assurance programs, hospitality law, and long-range planning.
  • Leadership skills to motivate and develop staff, ensuring goal accomplishment.
  • Ability to work effectively under time constraints and deadlines.
  • Effective verbal and written communication skills, with the ability to adapt communication style to suit different audiences.
