Job Description

We are seeking a skilled and dedicated Prep Cook to join our team at La Grande Boucherie - Chicago. As a key member of our culinary team, you will be responsible for preparing and presenting high-quality food to our guests.

Responsibilities:
  • Food Preparation: Handle all types of food and food products to prepare and present for dining customers.
  • Prep List Execution: Follow daily prep list as assigned by the Chef on Duty, including washing, peeling, and chopping produce, preparing ingredients for cooking, and cleaning and cutting or grinding meat, fish, poultry, and shellfish.
  • Cooking Tasks: Perform basic cooking tasks such as stirring, straining, and parboiling food and reducing sauces, measuring seasonings, condiments, and ingredients for use in cooking.
  • Utensil Handling: Ability to use various utensils and cutlery appropriately.
  • Shift Work: Complete shift work (opening and closing checklists) thoroughly in accordance with department standards.
  • Position Prep List: Complete position prep list, other food preparation, per the direction of the Chef on Duty.
  • Menu Preparation: Prepare all menu items following recipes and yield guides, according to department standards in a time-efficient manner.
  • Quality Control: Inform the Chef on Duty of any sub-par product prior to the start of service.
  • Temperature Control: Manage proper storing temperatures according to DOH regulations.
  • Sanitation: Maintain sanitation to Department of Health standards; keep work area clean and organized.
  • Safety Protocols: Inform the Chef on Duty immediately of any DOH or OSHA/workplace safety violations.
  • Equipment Maintenance: Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly and safely.
  • Teamwork: Be a team player—support and assist your fellow team members whenever possible.
