About the Role

We are seeking an experienced and skilled Assistant Culinary Director to join our team at Savannah Square. As a key member of our culinary team, you will be responsible for leading the kitchen team in the absence of the Director and working closely with the Head Chef and General Manager to ensure the smooth operation of our kitchen.

Key Responsibilities
  • Leadership and Guidance: Provide guidance and support to junior kitchen staff members, including line cooking, food preparation, and dish plating, as well as food orders and administrative duties related to staffing.
  • Staff Management: Make employment and termination decisions, including interviewing, hiring, evaluating, and disciplining kitchen personnel as appropriate.
  • Equipment Maintenance: Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following preventative maintenance programs or arranging for the same.
  • Inventory Management: Ensure that all products are ordered according to predetermined product specifications and received in the correct unit count and condition, and that deliveries are performed in accordance with our receiving policies and procedures.
  • Labor Scheduling: Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met.
  • Training and Development: Responsible for training kitchen personnel in cleanliness and sanitation practices.
  • Quality Control: Check, maintain, and record proper food holding and refrigeration temperature control points.
Requirements
  • Experience: Minimum two (2) years culinary experience, preferably in restaurants or senior living facilities.
  • Education: A Culinary Arts degree from a recognized school with two years of related experience as a Sous Chef or Lead Cook in a comparable-sized food service operation is desired.
  • Skills: Ability to read and understand recipes and menus, work in a team environment, work flexible shifts, handle multiple tasks at one time, and communicate effectively verbally and/or in writing.
  • Leadership: Ability to lead or supervise other team members, perform detailed work involving math calculations, problem solve, and handle emergency situations.
  • Interpersonal Skills: Must enjoy working with residents and be able to accept constructive criticism. Ability to interact with residents who are highly susceptible to common illnesses without posing additional health risks and must maintain good personal hygiene and wear a uniform.
