About the Role

We are seeking a highly skilled and experienced Sous Chef to join our team at Apicii Hospitality. As a key member of our culinary team, you will be responsible for overseeing the day-to-day operations of our kitchen, ensuring the highest standards of food quality, presentation, and service.

Key Responsibilities
  • Menu Development and Cost Control: Ensure menu items are cost-effective and reflect a balance between quality and profitability.
  • Team Leadership: Supervise and lead the kitchen staff, including sous chefs, line cooks, prep cooks, receivers, porters, and dishwashers.
  • Performance Management: Monitor and assess performance by providing consistent coaching, performance reviews, and addressing employee concerns.
  • Scheduling and Coordination: Schedule and coordinate shifts, ensuring adequate staffing levels to meet operational needs.
  • Employee Relations: Address employee concerns and grievances, escalating issues when necessary.
  • Quality Control: Monitor food preparation methods, techniques, and presentation to maintain high standards.
  • Inventory Management: Manage and control food inventory, including ordering ingredients, monitoring stock levels, and minimizing waste.
  • Supplier Relationships: Establish relationships with suppliers and negotiate pricing to optimize cost efficiency.
  • Health and Safety: Enforce strict adherence to health and safety regulations and food hygiene standards.
  • Collaboration and Communication: Collaborate with all management teams and front-of-house staff to align culinary offerings with the overall concept and goals of the establishment.
  • Event Management: Work closely with event management to coordinate the seamless execution of special events, catering services, or private functions.
  • Training and Development: Recruit and conduct training sessions for kitchen staff, ensuring they are well-versed in menu items, cooking techniques, safety protocols, proper food handling, storage, and sanitation practices.
  • Budget Management: Develop and manage kitchen budgets, including food costs, labor expenses, and overheads.
  • Cost-Saving Measures: Implement cost-saving measures without compromising quality.
  • Menu Customization: Create customized menus for special occasions and ensure seamless execution.
  • Company Policies: Implement and enforce Company policies and procedures.
Requirements
  • Culinary Degree or Equivalent: Culinary degree or equivalent culinary certification preferred.
  • Culinary Leadership Experience: 3+ years in a culinary leadership role, preferably as a Sous Chef.
  • Culinary Knowledge: In-depth knowledge of culinary techniques and flavors.
  • Leadership and Communication Skills: Strong leadership, communication, and organizational skills.
  • Timekeeping and Scheduling: Ability to effectively manage time and schedules.
  • Food Safety and Health Regulations: Knowledge of food safety and health regulations.
  • Customer-Centric: Customer-centric approach to service.
  • Employee Relations: Ability to effectively handle employee relations.
  • Business and Financial Acumen: Acute business and financial acumen.
  • Regulatory Compliance: Knowledge of regulatory compliance requirements with wage and hour, scheduling, etc.
  • Flexibility: Ability to work flexible hours, including evenings, weekends, and holidays.
