POSITION OVERVIEW

The Culinary Production Specialist is tasked with the meticulous preparation, cooking, baking, and proper storage of food items to ensure consistent yields and high-quality standards. This individual will prepare and serve exceptional meals to our guests in a welcoming and efficient manner, adhering to Parkhurst Dining's recipes, standards, and procedures while maintaining strict sanitary conditions in compliance with ServSafe and HAACP guidelines.

KEY RESPONSIBILITIES

  • Prepare meals in accordance with Parkhurst recipes, emphasizing the importance of the "batch" cooking technique.
  • Ensure the quality and consistency of food throughout the service period by utilizing production sheets.
  • Accurately cut, weigh, and prepare food items, adhering to company procedures and recipes, and following precise portion specifications.
  • Implement the FIFO method for rotating refrigerated and dry goods, in line with company policies.
  • Monitor and maintain appropriate temperatures for all food items, coolers, and freezers.
  • Properly wrap, label, date, and store all food items to preserve freshness and quality under stringent sanitary guidelines.
  • Complete necessary product cooling charts.
  • Maintain a clean and professional appearance while practicing proper personal hygiene.
  • Regularly wash hands as required.
  • Complete daily production documentation.
  • Distribute food products to designated service areas.
  • Maintain open communication with management regarding product and supply needs.
  • Follow the cleaning schedule as outlined by management, employing the "clean as you go" approach.
  • Assist colleagues whenever possible to ensure guest satisfaction.
  • Perform additional duties as assigned by management.
  • Support other kitchen areas as needed when requested by team members and management.
