About the Role:
The Four Seasons Resort O'ahu at Ko Olina is seeking a Restaurant Cook 2 On Call/Casual who embodies a passion for culinary excellence and the spirit of aloha. The Cook 2 will report to the Executive Chef and will be responsible for the preparation and execution of dishes in the designated outlet/area of the Resort.
Key Responsibilities:
- Prepare food items in accordance with chef standards and maintain consistent quality by following recipe cards, production, portion, and presentation standards; complete mise en place and set up the station for breakfast, lunch, and/or dinner service.
- Initiate food items that are prepared in advance, ensuring not to exceed estimated needs.
- Operate, maintain, and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
- Date all food containers and rotate as per policies, ensuring that all perishables are stored at appropriate temperatures; check pars for shift use, determine necessary preparation, freezer pull, and line setup; note any out-of-stock items or potential shortages; return all unused food items to designated storage areas, ensuring to cover/date all perishables; assist in developing plans and actions to address any food cost issues; manage food waste, loss, and usage according to policies.
- Adhere to Four Seasons' Category One and Category Two Work Rules and Standards of Conduct as outlined in EmPact.
- Collaborate harmoniously and professionally with colleagues and supervisors.
- Education: High school diploma, culinary school, or equivalent experience.
- Experience: Minimum of 3 years in culinary or related roles. Moderate culinary knowledge is expected for this position, generally acquired through on-the-job training.
- Skills and Abilities: Proficient in operating, maintaining, and cleaning kitchen equipment including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
- Successful candidates must possess legal work authorization in the United States.
