Job Overview

The Overnight Culinary Specialist plays a crucial role in crafting meal orders for staff and contractors at Thomas Cuisine. This position involves executing short order cooking while employing established culinary practices to prepare standard menu offerings. Responsibilities also encompass maintaining inventory levels, procuring supplies, rotating products to ensure optimal quality, and minimizing waste throughout the food preparation process. All culinary activities must adhere to both external and internal safety and sanitation protocols, as well as relevant regulatory standards. Our Culinary Specialists are accountable for the excellence of the meals they prepare.

Compensation: $15.00+/hr. DOE; plus $4.00 differential pay for night and weekend shifts.

Work Schedule: Friday - Tuesday, 6 PM - 1 AM

Key Responsibilities:

  • Ensure all meals are prepared with high quality, efficiency, and consistency to meet menu and customer expectations.
  • Build rapport with customers while embodying the values and mission of Thomas Cuisine.
  • Preferred 2+ years of experience in culinary or restaurant settings.
  • Set up and stock workstations with necessary supplies.
  • Properly handle, store, and rotate all food products.
  • Collaborate with kitchen staff to prepare menu items.
  • Adhere to the Sous Chef's directives at all times.
  • Utilize correct techniques and presentation standards for all dishes.
  • Follow food handling and storage procedures in compliance with company and state regulations.
  • Maintain compliance with all nutrition, sanitation, and safety standards.
  • Foster a positive, respectful, and professional environment with team members.
  • Report any unsafe working conditions or equipment issues to management.

Required Skills and Experience:

  • Experience in a scratch kitchen is preferred.
  • Ability to walk and stand for the duration of the shift.
  • Occasional requirements to sit, climb, balance, stoop, kneel, crouch, or crawl.
  • Regularly lift and carry equipment, boxes, and food products weighing up to 100 pounds; frequently lift/move over 100 pounds.
  • Lift and empty trashcans weighing up to 150 pounds, with assistance, multiple times per shift.
  • Ability to interact and respond to inquiries from managers, clients, and guests.
  • Proficient in basic math skills for measurements and calculations.
  • Capable of solving practical problems and adapting to various situations.
  • Frequent bending, stooping, reaching, pushing, and lifting required.
  • Able to work in a hot, humid, and fast-paced environment.
  • Must be able to read and comprehend MSDS sheets and chemical labels.
  • Knowledge of workplace safety policies is essential.
  • Must pass a background check and drug screening.
  • ServSafe certification is preferred.
