Job Summary

We're seeking a highly skilled and experienced Sous Chef to join our team. As a Sous Chef, you will be responsible for maintaining high culinary standards and operational efficiency in our kitchens. You will work closely with our culinary team to ensure that our food is of the highest quality and that our customers have an exceptional dining experience.

Key Responsibilities

  • Develop and implement culinary standards and operational guidelines to ensure consistency and quality in our kitchens.
  • Administer all aspects of food preparation, including inventory management, menu planning, and food safety protocols.
  • Collaborate with our culinary team to improve food costs, volume, quality, and attractiveness.
  • Perform a variety of culinary tasks, including broiler, sauté, Asian, and prep work, as needed.
  • Ensure compliance with all state and company sanitation requirements, including ServSafe certification.
  • Support safety and accident prevention programs, including knife handling and proper lifting techniques.
  • Monitor and implement garbage separation and disposal protocols.
  • Coordinate workflow during shifts to meet business demands and ensure customer satisfaction.
  • Provide exceptional customer service, soliciting and responding to feedback on food quality and resolving any issues.
  • Present yourself as a credit to the company and encourage others to do the same.
  • Perform other related and compatible duties as assigned.

Requirements

  • Bachelor's degree from an accredited four-year college or university (preferred).
  • Two years of progressively more challenging experience in a large-volume, high-quality food establishment.
  • Knowledge of menu planning, soups, sauces, meat, poultry, and seafood items.
  • Knowledge of food and labor costs.
  • Proven problem-solving and critical thinking skills.
  • Excellent customer service and employee relations skills.
  • Good oral and written communication skills, with fluency and literacy in English.
  • Ability to listen and respond to visual and aural cues.
  • Teamwork skills, with the ability to work collaboratively with other departments and leaders.
  • Compliance with all regulatory, governmental, and safety requirements.
  • Effective labor management to minimize overtime and ensure appropriate staff assignment to guest traffic flow.
  • Development of team members, including completion of all required training and knowledge of all policies and procedures.
  • Ability to meet deadlines and effectively manage multiple priorities in a demanding work environment.
  • Knowledge of and compliance with department, property, and company policies and procedures.
  • Maintenance of health department standards and regulations, with inspection scores at or above standards.
  • Physical mobility, with reasonable accommodations, including the ability to push, pull, carry, and lift up to 25 lbs., and the ability to perform various physical tasks in confined spaces.
