Job Summary

We are seeking an experienced and skilled Executive Chef to join our team at Spare Time Entertainment. As a key member of our culinary team, you will be responsible for overseeing the daily operations of our kitchen, ensuring the highest quality of food and service, and maintaining a clean and safe working environment.

Key Responsibilities
  • Oversee and administer training and development of kitchen personnel, ensuring they have the skills and knowledge to deliver exceptional service.
  • Attend all scheduled employee meetings and bring suggestions for improvement to enhance the overall kitchen experience.
  • Work with Culinary Management to plan, price, and implement menu items that meet the needs of our guests and drive business growth.
  • Collaborate with Event Planners, food team, and FOH team to plan and successfully execute all events, ensuring seamless execution and exceptional guest satisfaction.
  • Meet weekly with the General Manager to discuss kitchen operations, address any concerns, and align on key objectives.
  • Schedule labor as required by anticipated business activity, ensuring adequate staffing levels to meet guest demand.
  • Prepare all required paperwork, orders, inventories, forms, and other reports in an accurate and timely manner.
  • Ensure knowledge of kitchen policies regarding personnel and administer prompt, fair, and consistent corrective action for any and all violations of company policies, rules, and procedures.
  • Assist management with employment and termination decisions, including interviewing, hiring, evaluating, and disciplining kitchen personnel as needed.
  • Identify and manage staff projects, ensuring timely completion and alignment with business objectives.
  • Ensure security, functionality, and proper handling of company property in the department, including equipment and food storage areas.
  • Monitor and control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes, and waste control procedures.
  • Open and close the kitchen properly, following the opening/closing checklist for kitchen stations, and assist others in closing the kitchen.
  • Maintain a clean and sanitary workstation area, including all kitchen equipment, and ensure that all equipment and food storage areas are kept clean and in excellent working condition.
  • Check and maintain proper food holding and refrigeration temperature control points, ensuring compliance with health and safety regulations.
  • Assume 100% responsibility for the quality of products served, ensuring that all food and products are consistently prepared and served according to the restaurants' recipes, portioning, cooking, and serving standards.
  • Assist in food prep assignments during off-peak periods as needed, ensuring adequate staffing levels to meet guest demand.
  • Stock and maintain sufficient levels of food products at line stations to assure a smooth service period.
  • Prepare food items for broiling, grilling, frying, or other cooking methods by portioning, battering, breading, seasoning, and/or marinating.
  • Follow proper plate presentation and garnish set up for all dishes, ensuring visual appeal and consistency.
  • Assist in the creation of unique caterings for high-end clients, ensuring exceptional service and quality.
  • Create and implement approved weekly features that may not be on the regular menu, driving business growth and guest satisfaction.
  • Interact professionally with guests and colleagues, using Spare Time Service Standards (Code S.E.R.V.E.) and Spare Time Entertainments Steps of Service.
  • Respond personally to guest questions and complaints, ensuring prompt and effective resolution.
  • Report all company violations to management, ensuring compliance with company policies and procedures.
Requirements
  • High school diploma or Culinary Degree/Certification preferred.
  • 5+ years high-volume kitchen experience.
  • 2+ years in a leadership/management role operation.
  • Serve Safe Certification required.
