ASM Global, a leading provider of public assembly facilities, has an exciting opportunity for a Culinary Operations Supervisor at the Long Beach Convention & Entertainment Center.

The Culinary Operations Supervisor is responsible for overseeing the hot kitchen, including scheduling and supervising employees.

Please note that Long Beach Convention and Entertainment Center Food and Beverage employees are covered by a collective bargaining agreement with Unite Here Local 11, and a condition of employment is union membership.


Key Responsibilities:
Works closely with the cold prep team to ensure seamless production and service.
Provides guidance to cooking personnel on cooking techniques and standards.

Supervises cooks in all areas of hot kitchen production, including preparation, cooking, and serving of all hot food items.

Assumes responsibility for the kitchen in the absence of the Executive Chef
Responsible for completing all necessary paperwork and ensuring compliance with company policies and procedures.
Orders all food required for hot food production.
Collaborates with the kitchen steward and his team to ensure a clean and organized kitchen environment.
Manages the overall direction, coordination, and evaluation of the culinary team.
Carries out supervisory responsibilities in accordance with company policies and applicable laws.
Plans, assigns, and directs work, as well as trains employees.
Addresses complaints and resolves problems promptly and effectively.
Qualifications
Bachelor's degree or technical school culinary education and training.
Five years' experience as a Chef managing fast-paced, high-volume kitchen operations.

Must have extensive experience managing catering functions and retail operations, or equivalent combination of education and experience.

Ability to read and interpret documents, such as safety rules and operating instructions.
Must have knowledge of spreadsheet software and word processing software, and be able to learn new programs as needed.
Strong hospitality orientation and excellent communication skills.
Ability to multitask and prioritize responsibilities effectively.
Must be ServSafe certified and LEAD or ServeSMART certified.
Must have the ability to work a varied and flexible schedule.
DMV clearance in compliance with company policies.
Must have the ability to read, analyze, and interpret general business periodicals, professional journals, and technical procedures.
Must be able to write reports, business correspondence, and procedure manuals.

Must have the ability to effectively present information and respond to questions from groups or managers, clients, customers, and the general public.

Have the ability to calculate food quantities needed and perform basic math calculations.
Must be able to read and perform all standard and custom menus.
Check all BEOs for missing information relating to food requirements.

Must be able to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.

Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
