At Legends Hospitality, we're seeking a skilled Sushi Cook to join our culinary team.
Job Summary:
The Sushi Cook is responsible for the production of all assigned menu items, ensuring they are completed in an efficient and consistent manner while following Legends' specifications, recipes, and technique, and maintaining sanitation standards.
Key Responsibilities:
Follows Executive Chef, Sous Chefs, and/or Culinary Supervisors' assignments for opening and closing procedures and food preparation.
Prepares sushi items by complying with portion size, quality standards, departmental rules, policies, and procedures, ensuring teams are doing the same.
Maintains HACCP standards, ensuring a high-quality level of food, food temperatures, rotation of product, cleanliness, and sanitation standards.
Maintains cleanliness of kitchen, including walk-in coolers, dry storage, shelves, walls, floors, and drains.
Ensures all food preparation equipment is clean and sanitized and that it is kept in a safe and operable condition, reporting issues to Chefs.
Identifies and stores all food items according to established standards.
Must be able to prepare a sushi platter on site, as part of the final stage of the interview process.
Previous sushi preparation experience required.
Strong knife skills and kitchen equipment knowledge.
Must be able to obtain food safety certification.
Must be able to work extended hours due to business requirements, including late nights, weekends, and holidays.
Follows and encourages team members to follow all safety policies and procedures, including but not limited to looking for and reporting any unsafe work conditions, and completes company-wide safety training and any additional job-specific safety training.
