Position Summary:
The Culinary Specialist is responsible for the precise and efficient preparation of various food items including meats, seafood, vegetables, soups, and other hot dishes. This role also involves the preparation and portioning of food products prior to cooking, as well as executing tasks related to food presentation and garnishing.
Key Responsibilities:
Take full ownership of the quality of all food items served.
Complete the opening and closing checklists diligently.
Refer to the Daily Prep List and Checklists at the beginning of each shift for assigned tasks.
Consistently adhere to standard portion sizes, cooking techniques, quality benchmarks, and kitchen policies.
Ensure adequate stock levels of food products at line stations to facilitate smooth service.
Portion food items according to established standards and recipe guidelines.
Maintain a clean and sanitary workspace, including tables, shelves, grills, fryers, and other kitchen equipment.
Prepare items for various cooking methods by portioning, seasoning, and marinating as required. Follow proper presentation and garnish setup for all dishes according to specifications.
Handle, store, and rotate all products correctly. Assist with food preparation tasks during slower periods as necessary.
Open or close the kitchen according to established procedures and checklists.
Complete any additional tasks or directives from management in a courteous, timely, and accurate manner.
