The CULINARY OPERATIONS MANAGER (COM) is tasked with overseeing the entire Back of House (BOH) operations. This includes managing financial aspects (sales enhancement and cost management) and ensuring operational excellence. The COM collaborates closely with the General Manager.

This position demands a diverse skill set encompassing extensive culinary expertise, innovative food preparation and presentation, adept planning, organization, time management, effective communication, and strong delegation skills to guarantee that the BOH functions at a consistently high level of productivity and efficiency. Additionally, the role is responsible for upholding the highest sanitation standards as mandated by local regulations and internal policies.

KEY RESPONSIBILITIES

Accountable for, but not limited to, the following:

  • Complete responsibility and accountability for the BOH operations
  • Drives the culinary innovation of menus and programs for the establishment
  • Successfully leads efforts to meet revenue, cost control, and profit objectives for the BOH
  • Manages inventory (product ordering, receipt, and usage) and financial accountability within the BOH (including precise tracking of funds owed, paid, and received)
  • Guides the BOH Management Team in utilizing accounting and sales enhancement tools established as Standard Operating Procedures (SOP) within the organization
  • Directs the BOH Management Team in employing planning, review, organizational, and inventory management tools established as SOP within the organization
  • Supervises the kitchen operations during service hours; ensuring that overall BOH activities (food quality, preparation, plating specifications, and timeliness) adhere to our standards of excellence through active participation and oversight
  • Ensures effective resolution of all guest food-related concerns and mentors the BOH management and staff to address such issues
  • Conducts audits of operational standards throughout the BOH and implements corrective measures to uphold our standards of excellence
  • Leads the BOH in achieving and maintaining a local Health Department Sanitation Grade A rating (or equivalent)
  • Oversees BOH facility maintenance by ensuring proper care of the premises and equipment
  • Responsible for hiring, onboarding, training, and scheduling all BOH personnel to meet Company standards
  • Mentors the BOH management and staff, holding them accountable for achieving Company standards as applicable
  • Implements disciplinary actions, documentation, and, when necessary, termination of BOH staff in accordance with Company policies and procedures
  • Acts as the primary representative of the culinary brand and business at the local level; fostering the food business as a vital part of the local community through internal community events and external outreach/networking
  • Establishes, nurtures, and maintains trusted relationships with employees, guests, community organizations, vendors, and local authorities (Health Department, etc.)
  • Ensures compliance with all local and state regulations regarding food service

WORK SCHEDULE

This is an Exempt position

  • 50+ hours during a typical week
  • The Culinary Operations Manager's schedule will include both day and night shifts, including weekends, throughout the week
  • Hours may increase during peak business periods (such as holidays) and when the Management Team is not fully staffed (due to vacations or manager shortages)

This position requires:

  • The ability to remain on your feet (both standing and walking) for extended durations
  • The capacity to lift up to 50lbs

Health Insurance reimbursement is provided, but no Dental or Vision coverage.
