Position Overview:
The Kitchen Manager oversees all culinary staff and food production at Cafe 13. This role includes managing food purchasing specifications and ensuring adherence to standardized recipes. The Kitchen Manager is tasked with upholding the highest standards of food quality and hygiene throughout the establishment. This is a salaried position requiring full-time commitment, with expectations of up to 50 hours per week, including availability on weekends, evenings, and holidays.
Key Responsibilities:
- Supervision of all kitchen personnel, including line cooks, prep cooks, and dishwashers.
- Conducting interviews and hiring kitchen staff, including line and prep cooks, bakers, and dishwashers.
- Providing guidance, counseling, and disciplinary actions for kitchen staff; organizing and coordinating their work to ensure efficient and budget-conscious food preparation.
- Training all kitchen employees, including line cooks, prep cooks, and dishwashers.
- Creating weekly kitchen schedules using Homebase, prepared two weeks in advance.
- Conducting monthly performance evaluations with each kitchen employee.
- Management and oversight of kitchen operations.
- Maintaining essential documents such as:
- Order Guide
- Prep List
- Recipe Book
- Maintenance Schedule
- Inventory Records
- Placing orders for kitchen ingredients and supplies 2-4 times weekly.
- Receiving deliveries and verifying accuracy.
- Training staff to handle inventory and order placement during off days.
- Identifying opportunities to minimize waste, reduce costs, and enhance operational efficiency.
- Developing special menu items and new recipes.
- Ensuring the accuracy and quality of all food served.
- Promoting professionalism in customer service and embodying the values of Cafe 13 to guests and staff alike.
- Kitchen Cleanliness and Maintenance:
- Ensuring compliance with hygiene, professionalism, cleanliness, and safety standards in all kitchen areas, adhering to State and County Health Code requirements; establishing a regular cleaning and maintenance schedule for all kitchen spaces and equipment.
- Ensuring all kitchen equipment is functional, with regular maintenance scheduled as needed.
- Submitting purchase requests for equipment and supplies exceeding $300 in quantity to the General Manager.
- Required Skills and Qualifications:
- Proficiency in computer applications such as Homebase, Inventory Systems, Excel, and ordering platforms.
- Excellent verbal and written communication skills.
- Current ServSafe Certification is mandatory.
Physical Requirements:
- Regularly required to stand, walk, sit, use hands, handle or feel, reach with hands and arms, and stoop, kneel, or crouch.
- Must occasionally lift and/or move up to 50 lbs.
- Understanding that the kitchen environment poses certain risks, including slippery floors and sharp utensils, with a commitment to exercising caution in the back of house.
Job Type: Full-time
Compensation: $55,000 - $70,000 annually
