Role Objective:

Under general supervision, the Kitchen Sanitation Specialist ensures that all kitchen and dining ware is kept clean and sanitary. Providing warm and knowledgeable service is essential to reassure guests of their choice to dine with us.

  • Utilize and manage cleaning equipment and tools, including dishwashing machines and hand wash stations.

Maintain cleanliness in kitchen and storage areas, including tables, tools, knives, and equipment.

  • Receive and properly store deliveries, ensuring perishable items are rotated appropriately.
  • Guarantee that clean wares are stored in designated areas.
  • Employ detergent, rinsing, and sanitizing chemicals in the 3-compartment sink for effective dish cleaning.
  • Inspect, organize, and stack cleaned items while sending soiled items back for re-scrubbing and washing.
  • Sort, soak, and wash/re-wash silverware as needed.
  • Break down dirty bus tubs and maintain trashcans and dumpster areas.
  • Clean and mop all assigned areas regularly.
  • Dispose of glass and break down cardboard for recycling.
  • Prevent loss of dishware, utensils, and kitchen equipment.
  • Report maintenance issues promptly.
  • Assist servers with clearing and resetting tables when necessary.
  • Engage positively with guests and co-workers, maintaining a professional appearance and demeanor.
  • Handle special requests and respond promptly to management inquiries.
  • Participate in required meetings and contribute positively to team dynamics.
  • Be self-motivated, use time efficiently, and communicate effectively with all departments.

Qualifications:

A high school diploma or equivalent is required.

Experience with hospitality industry standards is preferred.

Physical Requirements:

  • Ability to work indoors with moderate temperatures, and endure extreme temperatures in freezers and kitchens.
  • Stand and maintain mobility for up to 4 hours.
  • Physically handle kitchen items, lifting up to 50 pounds as needed.
  • Perform tasks that require bending, stooping, and stretching.
  • Push and pull carts and equipment weighing up to 250 pounds.
  • Engage in continuous communication with guests and team members.

  • Strong interpersonal skills for effective guest and employee interaction.
  • Basic math skills for handling cash and credit transactions.
  • Flexibility to work various shifts, including nights and weekends.
