Job Overview

The starting pay range for this role begins at $15/hour, determined by qualifications and relevant experience. This is a Full-Time position, requiring 35+ hours per week.

The Culinary Preparation Specialist is primarily tasked with the assembly of food products for menu items and specials that align with Biltmore's standards for all dining, banquet, and a la carte services. This role typically operates within the pantry and preparation stations, focusing on both cold and hot food preparations for service. Additionally, the Culinary Preparation Specialist may assist at buffet carving and service stations, as well as fulfill basic made-to-order requests from guests as needed. Responsibilities also include proper receiving, storage, and rotation of food products. Success in this position will be evaluated based on guest satisfaction, cleanliness, organization, product quality, consistency, and timeliness of service. The role provides general assistance and support to the department, leadership, and the company as required.

Key Responsibilities:

  1. Prepare food and ingredients for menu items and specials.
  2. Maintain a sanitized work area while adhering to proper ServSafe requirements.
  3. Ensure all equipment is cleaned, maintained, and in safe working order.
  4. Organize all stations, coolers, and walk-ins for the next shift.
  5. Review daily forecasts to prepare and set up accordingly.
  6. Accountable for proper rotation, storage, and dating of all food items.
  7. Ensure all items are prepared, sliced, garnished, and presented to Biltmore's quality standards.
  8. Responsible for all preparation work for line stations.
  9. Check all food items daily for quality and freshness.
  10. Plan in advance to ensure everything needed for the next shift is ready.

Qualifications:

  1. Previous experience in food preparation within a full-service restaurant is strongly preferred. Culinary certifications and training are beneficial. Ideal candidates should have at least six months of experience in food preparation in a fine dining or upscale setting, with exposure to banquet and buffet production as well as a la carte service.
  2. Basic math, knife handling, and food preparation skills are required.
  3. Knowledge of food sanitation procedures is essential; ServSafe certification is preferred.
  4. Ability to read and execute recipes is necessary.
  5. Capable of working effectively with or without direct supervision.
  6. Strong time management and organizational skills are important.
  7. Proactive attitude, good judgment, and initiative are essential.
  8. Commitment to delivering exceptional guest service and dining experiences is required.

Physical Requirements:

  1. Able to sit, stand, twist, bend, push, pull, walk, and lift up to 50 pounds regularly for up to 12 hours a day.
  2. Able to work effectively in a kitchen environment with varying temperatures and conditions (heat, cold, humidity) for extended periods.
