Position Overview:
We are seeking a talented and seasoned Catering Sous Chef to join our culinary team at the New York Botanical Garden. In this role, you will not only showcase your culinary expertise but also mentor others as you lead the preparation, seasoning, and cooking of a variety of dishes including salads, soups, fish, meats, vegetables, desserts, and more. Your primary focus will be on catered events, while also overseeing the culinary operations at the venue.
Key Responsibilities:
- Design and create menus that align with customer preferences, nutritional requirements, and budgetary guidelines; engage in menu planning activities including product testing and recipe development.
- Ensure adherence to production, safety, and sanitation standards.
- Oversee and actively participate in the daily preparation of both standard and gourmet food items.
- Assess the quality of raw ingredients and guarantee the excellence of the final dishes.
- Conduct inspections of assigned areas to monitor food preparation quality, presentation, and cleanliness of production and service spaces.
- Execute culinary production for special events and catered functions.
- Supervise and assist in the presentation of menu items for special occasions.
- Maintain effective inventory management for food, supplies, and equipment. Participate in the recruitment, training, and evaluation of kitchen staff.
- Manage revenue and expenses to meet financial objectives.
- Deliver exceptional customer service.
- Perform additional duties as required.
Qualifications:
Essential Qualifications:
- Proven culinary skills in institutional, hotel, or restaurant settings, particularly in large-scale food production.
- A minimum of 5 years of experience in culinary management.
- Experience in catering, whether in private events, hotels, or high-volume restaurants.
- Strong leadership and effective communication skills, both verbal and written.
- A demonstrated ability to manage costs and adhere to annual budgets.
Preferred Qualifications:
- A Bachelor's degree in institutional management, nutrition, dietetics, or hospitality management, or equivalent education and experience.
