General Overview: The role of a Sous Chef is pivotal in the kitchen hierarchy. This position demands a strong commitment to excellence and leadership. A new Sous Chef must understand that the journey involves continuous learning and leadership, acting as a vital link between the Chef de Cuisine (CDC) or Executive Chef (EC) and the kitchen staff. Proficiency in all kitchen stations and operations is essential, along with a comprehensive understanding of the roles of team members above them.

Key Responsibilities:

  • Oversee service periods and manage kitchen crew effectively.
  • Maintain a broad perspective on all kitchen activities.
  • Recognize the strengths and weaknesses of the team, delegating tasks appropriately while setting clear expectations.
  • Assist kitchen staff with culinary techniques and preparation, providing guidance as needed.
  • Stay informed about menu updates, regardless of service periods.
  • Communicate essential information regarding daily services to the kitchen staff, including menu changes and assignments.
  • Ensure that stewarding staff adhere to their responsibilities for opening, closing, and mid-service tasks, collaborating with the CDC on oversight.
  • Keep walk-in and dry storage areas organized and clean.
  • Coordinate daily and weekly product orders with the CDC.
  • Monitor food and labor costs, striving to manage these effectively during service periods.
  • Work alongside the CDC and/or EC on menu innovation and development.

Qualifications:

  • At least two years of experience in a fine dining environment.
  • Strong understanding of professional cooking techniques and knife skills.
  • Knowledge of food safety, sanitation, and handling procedures.
  • Flexibility to work various hours, including nights and weekends.
  • Dependable, responsible, and punctual.
  • Excellent communication skills; proficiency in English is required.
  • Professional appearance and demeanor.
  • Demonstrates enthusiasm for the mission and values of 21c Museum Hotels.
  • Must successfully pass a background check.

Travel Requirements: As necessary.
