Position Overview

Role Overview:

As a Nighttime Pastry Specialist, you will oversee the preparation, production, and inventory management for the pastry division. Your responsibilities will include the handling, preparation, and storage of perishable goods. You will comply with HACCP standards to guarantee efficient, safe, and hygienic food production, preparation, and presentation. Additional responsibilities may encompass menu creation, inventory management, sanitation, and supervision of hourly staff, including hiring, coaching, and development.

Key Responsibilities:

  • Oversee the preparation, production, and inventory for the pastry division.
  • Work schedule from 8:00 PM to 6:00 AM, with flexibility to work on holidays and weekends.
  • Handle, prepare, and store perishable items appropriately.
  • Adhere to HACCP standards to ensure safe and sanitary food production.

Preferred Qualifications:

  • Culinary degree is preferred.
  • A minimum of three years of relevant experience in upscale, high-volume dining or catering environments.
  • Ability to showcase creative and quality-focused pastry skills.
  • Strong knowledge of food quality and product recognition.
  • In-depth understanding of current culinary trends, with an emphasis on seasonal ingredients, production, sanitation, food cost management, menu design, and presentation.
  • Proficient in Microsoft Office and overall computer skills.
  • Familiarity with safe and sanitary food handling practices.
  • ServSafe or Department of Health certification is a plus.
