Job Overview

The Sous Chef Manager plays a pivotal role in overseeing the preparation of high-quality, authentic Italian dishes within Eataly's vibrant, high-volume kitchen environment. This position is essential for maintaining exceptional food standards while fostering a culture of excellence among the culinary team.

Key Responsibilities
  • Support Daily Operations: Collaborate with Sous Chefs to ensure seamless kitchen operations and uphold Eataly's service standards.
  • Staff Management: Assist in the recruitment, scheduling, and performance evaluation of kitchen personnel.
  • Kitchen Supervision: Oversee the mise en place for all cooking stations, ensuring readiness for service.
  • Menu Development: Participate in the planning and execution of menu items, managing food production effectively.
  • Training and Development: Mentor and guide cooks and sous chefs to meet quality, safety, and health standards consistently.
  • Inventory Management: Manage food requisitions and control costs by utilizing surplus ingredients.
  • Sanitation Compliance: Ensure adherence to sanitation and nutrition practices among all kitchen staff.
  • Communication: Relay menu updates and special items to front-of-house staff.
  • Incident Management: Document and address any employee or guest incidents that arise.
  • Additional Duties: Perform other responsibilities as assigned.
Qualifications
  • Minimum of 4 years of culinary experience, including at least 1 year in a management role.
  • Preferred: Bachelor's Degree or equivalent from a culinary arts program.
  • Strong communication and interpersonal skills.
  • Proficient in computer applications relevant to kitchen management.
  • Flexible availability, including evenings, weekends, and holidays.
  • Physical ability to lift up to 50 lbs and maintain mobility in a fast-paced kitchen environment.
  • Experience with commercial kitchen equipment.

Salary Range: Competitive salary between $65,000 and $75,000, plus bonuses.
