About the Role:

The Meat Cutter Specialist is a key member of our meat department team, responsible for meeting daily production needs and quality standards in meat cutting and preparation. This role requires a high level of attention to detail, strong communication skills, and the ability to work effectively in a fast-paced environment.

Key Responsibilities:

  • Receive, stock, cut, grind, wrap, weigh, price, and merchandise meat department products to meet customer needs and quality standards.
  • Order and stock prepackaged deli items and frozen food products that pertain to the meat department.
  • Pack, prepare trays, weigh items to properly label, rotate product, and remove out-of-code-date products to ensure proper inventory control and product rotation.
  • Maximize product freshness and availability while minimizing waste.
  • Provide excellent customer service, answering questions about products and services, and cutting and trimming meat to size for display or as ordered by customers.
  • Operate hand tools and power equipment, such as grinders, cubing machines, and power saws, to prepare meat for display or customer orders.
  • Locate and retrieve meat portions from the walk-in freezer/refrigerator, remove individual pieces, and place them on a cart for transportation to the cutting room.
  • Use knives and occasional band saws to prepare specific cuts of meat from larger portions.
  • Set machines for proper pricing and labeling of meat to be wrapped.
  • Arrange packages on display and remove any out-of-date or damaged packages from display.
  • Clean and sanitize work areas and equipment, wash, wipe, and clean tools, equipment, and counters, sweep and/or hose floor surfaces.
  • Operate an electric tow motor to move pallets from the receiving area to storage areas.
  • Instruct, supervise, and direct Apprentice Meat Cutters as required.
  • Perform other duties as assigned.

Requirements:

  • Ability to comprehend and follow specific instructions.
  • Ability to perform simple and repetitive tasks.
  • Ability to maintain work pace appropriate to a given workload.
  • Knowledge of meat (including primal cuts), poultry, fish, and pre-packaged products.
  • Understanding of special product needs that arise for seasons/holidays.
  • Awareness of trends in cooking and recipes that affect demand.
  • Knowledge of department food safety and hazardous materials rules/regulations.
  • Ability to use and care for professional cutlery, saws, tenderizers, grinders, wrapping equipment, and other department-related tools.

Education and Experience:

  • High School Diploma (or equivalent) and prior meat department experience, including cutting of meat.

Physical Demands:

  • Ability to sit, stand, walk, kneel, stoop, use stairs, reach, pull, and lift objects.
  • Requires lifting up to 50 pounds.
