Key Responsibilities:
- Support the Executive Chef in crafting and executing daily menu selections, specials, and seasonal dishes.
- Work alongside the Executive Chef to curate and sustain a premium menu that highlights fresh, local ingredients.
- Supervise the preparation and presentation of all dishes, ensuring meticulous attention to detail and consistency in both flavor and presentation.
- Oversee kitchen operations, including food preparation, plating, and overall presentation.
- Collaborate with kitchen staff to ensure smooth service and operational efficiency.
- Uphold exceptional standards of cleanliness, organization, and safety within the kitchen environment.
- Build and maintain partnerships with local farmers and suppliers to procure fresh, seasonal produce.
- Engage in menu planning and development, including the creation and testing of recipes.
- Guarantee that all culinary creations are prepared to the highest standards of quality and visual appeal.
- Monitor inventory levels and manage kitchen supplies to optimize resource utilization.
- Assist the Executive Chef in managing labor costs, scheduling, and staffing requirements.
- A minimum of 5 years of experience in fine dining as a Sous Chef or Head Culinary Specialist.
- Proficient technical skills in classical cooking methods, emphasizing creative presentation and flavor development.
- Capability to work with seasonal, local ingredients and design menus that highlight their unique flavors.
- Exceptional attention to detail and a commitment to maintaining high standards of quality and presentation.
- Strong leadership and management abilities, with a talent for inspiring and guiding a team of culinary professionals.
- Excellent communication and organizational skills.
- Able to thrive in a fast-paced environment with high-pressure demands.
- Formal training in classical French cuisine or experience in a French-inspired culinary setting.
- Experience in catering or managing special events.
