Overview:


The Culinary Banquet Specialist plays a crucial role in the efficient and precise preparation and presentation of banquet dishes in accordance with established specifications and event requirements.


Responsibilities:

Key Responsibilities:
Engage with guests and team members in a warm, friendly, and service-oriented manner.

Adhere to attendance standards as per company guidelines, with schedules that may vary based on operational needs.

Uphold high standards of personal grooming and attire, including wearing the designated uniform and name tag while on duty.
Comply consistently with company policies and procedures to promote safe and effective hotel operations.
Ensure meats and poultry are roasted to the correct temperatures.
Portion and bake fish according to event specifications.
Prepare large quantities of food for banquet services.
Efficiently prepare and store a variety of fruits and vegetables.
Understand and implement proper food storage and handling techniques.
Maintain a clean and sanitary workspace.
Effectively differentiate and utilize spices.
Prepare, store, heat, and serve hot hors d'oeuvres.
Cook potatoes in various styles as per event specifications or recipe guidelines.
Safely and effectively operate frying equipment.
Demonstrate knowledge of battering and breading techniques.
Exhibit proficiency in various cooking methods including braising, pan-frying, sautéing, poaching, boiling, par-cooking, broiling, deep frying, and roasting.
Prepare rice and pasta dishes.
Portion food appropriately for specific events.
Serve food to waitstaff, ensuring timely delivery to the dining area.
Recover leftover food from events and return it to the main kitchen.

Additional Responsibilities:
Understand the formal requisition process for food supplies.
Recognize and utilize available food garnishes.
Follow the direction of the sous chef in daily tasks.
Perform other duties as assigned.

Qualifications:

Education & Experience:
A high school diploma or relevant experience in a hospitality setting is preferred.

Physical Requirements:
Ability to work long hours as needed.

Medium work - Ability to exert up to 50 pounds of force occasionally and/or 20 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects.


Mental Requirements:
Ability to communicate information and ideas clearly.
Ability to evaluate and select among alternative courses of action quickly and accurately.
Ability to perform well in high-pressure, fast-paced environments.
