Under the guidance of the Pastry Chef, the Pastry Chef de Partie is tasked with daily preparation and service for the dining establishment, inn, and various guest experiences. This position is accountable for supervising and ensuring quality benchmarks for all designated areas. Interaction with guests is expected, thus a warm, authentic hospitality and readiness to assist is crucial for enhancing our guests' experiences.
- Comprehend the quality standards and expectations of the establishment.
- Coordinate daily work schedules with fellow Chef de Parties, Commis, and Externs/Stages.
- Ensure all necessary items are present in the kitchen at the beginning of the shift through personal inspection. Communicate any requirements promptly, ensuring all ingredients meet our quality standards and align with the guidelines set by the Management Team. Report any discrepancies in a timely manner.
- Guarantee all mise en place for assigned sections is completed and organized promptly and to the restaurant's standards.
- Oversee the efficient, consistent, accurate, and organized production of mise en place requested by the Sous Chefs, Chef de Cuisine, and Executive Chef/Owner. Aid in training and mentoring team members to help them achieve the team's vision. Maintain an accurate recipe book and journal for techniques, ensuring it is up-to-date with the menu and company documentation procedures.
- Collaborate as needed in menu modifications and development.
- Ensure that all food and products are consistently prepared and served according to the establishment's recipes, portioning, preparation, serving, and health standards.
- Organize and prioritize daily tasks to ensure timely completion.
- Maintain a clean, sanitary, and safe work environment. Keep all areas clean and organized at all times.
- Work collaboratively with the team to ensure standards are met or exceeded regarding the appearance of the facilities, sanitation, and cleanliness through employee training and fostering a positive, productive working environment.
- Communicate effectively with all team members to ensure standards are achieved.
- Take appropriate action to resolve any issues that may arise.
- Ensure equipment is kept clean and in excellent working condition.
- Attend all scheduled employee meetings and come prepared to contribute to brainstorming sessions.
- Provide mentorship to new and less experienced staff members.
- Flexibility to work varying shifts, evenings, weekends, holidays, and overtime as business needs dictate.
- All other duties as assigned by supervisor.
- Minimum 3 years of fine dining restaurant and culinary experience.

- Ability to reach, bend, stoop, kneel, push, pull, climb stairs/ladders, and frequently lift up to 50 pounds.
- Continual use of manual dexterity and gross motor skills with frequent use of bi-manual dexterity and fine motor skills.
Environmental and Physical Requirements:
- Ability to perform essential job functions consistently, safely, and successfully with federal, state, and local standards.
- Must be able to lift and carry up to 40 pounds.
- Ability to stand and/or sit for prolonged periods.
- Ability to physically maneuver through work areas; bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, climb stairs and steps, or otherwise move in a constantly changing environment.
