PRIMARY ROLE:
The Catering Chef is accountable for the comprehensive management of catering operations, ensuring high production levels, quality standards, inventory control, sanitation, adherence to Kosher laws, and compliance with food safety regulations as per State and Federal guidelines. This role, under the direction of the Director of Dining Services, aims to provide exceptional food service and deliver high-quality menus along with outstanding customer service.
KEY RESPONSIBILITIES:
- Collaborate with clients to select appropriate menus and pricing for catering events with guidance from the Director of Dining Services.
- Manage all catering preparations before and after events to guarantee food quality and service success.
- Prepare detailed catering order forms based on client specifications and preferences.- Supervise food preparation, transportation, and setup activities to ensure event success.
- Ensure all events and meetings are properly organized each day.
- Verify that all food items are cooked to the correct temperatures in accordance with State and Federal guidelines.
- Document food item temperatures at designated times.
- Ensure meal preparations are timed to meet serving deadlines.
- Adhere to food handling procedures in line with sanitation policies and regulatory requirements.
- Achieve and maintain ServSafe certification.- Document refrigerator and freezer temperatures at appropriate intervals.
- Maintain a clean and sanitary kitchen and workstation.
- Contribute to the development and revision of catering menus.
- Oversee the Mobile Meals Program.
- Prepare food in adequate quantities and of high quality according to assigned menus.
- Monitor food inventories to meet menu needs and special dietary requirements.
- Ensure that all cooking staff consistently observe Kashrus in food preparation and report any issues to the Director and Rabbi.
EXPERIENCE:
Preferred candidates will have three years of supervised food service experience in a skilled nursing facility, retirement community, or residential service. Specialized training or experience in geriatric care or gerontology is a plus.
EDUCATION:
A high school diploma or equivalent is required. Specialized training in food service, including completion of an approved sanitation and safety course, is essential.
LICENSE AND CERTIFICATIONS:
ServSafe Certification is required or must be obtained within six months, with ongoing certification maintenance.
