Job Title: Sous Chef

Reports To: Executive Chef

SUMMARY: Collaborate with the Executive Chef to develop a distinctive Farm-to-Table culinary experience that embodies the ethos of Sunrise Ranch. This full-time role demands a skilled individual with robust culinary expertise and leadership capabilities, along with a comprehensive understanding of kitchen operations and effective management practices.
WORK AVAILABILITY: 32-40 hours per week, including evenings, weekends, and holidays.
SALARY RANGE: $25/hour

KEY RESPONSIBILITIES:
  • Assist the Executive Chef in the daily kitchen operations.
  • Demonstrate a passion for food within a farm-to-table framework.
  • Foster a nurturing environment, acknowledging the kitchen as the heart of the home.
  • Maintain high culinary standards in the preparation and innovation of farm-to-table dishes and menus.
  • Ensure quality control and reduce waste effectively.
  • Possess knowledge of safety and sanitation protocols; Servsafe Certification is advantageous.
  • Support inventory management and collaborate with the Head Chef and Senior Sous Chef to adhere to budgetary constraints.
  • Help the Senior Sous Chef establish a cleaning schedule and systems to uphold cleanliness.
  • Be open to guidance and constructive feedback.
  • Uphold professional standards and best practices within the kitchen environment.
  • Collaborate with the Accounting Department to maintain budgetary compliance.
  • Manage food costs, portion sizes, and inventory levels.
  • Assist with quarterly inventory assessments.
  • Utilize ingredients creatively as reflected in the weekly menu.
  • Develop, test, and document new recipes that align with our signature culinary style.
  • Coordinate with the Dining Room Hostess to ensure adherence to food service protocols.
  • Maintain cleanliness and organization in waste management areas.
  • Oversee and mentor kitchen staff to deliver exceptional meals for a large number of guests.
  • Consistently uphold a clean and safe working environment.
  • Contribute to the overall mission of Sunrise Ranch through:
    • Creative and uplifting expressions that inspire others.
    • Active participation in the Sunrise Ranch community.
    • Diligent and productive efforts that support team objectives.
    • Providing a clear and supportive environment for guests and staff.
  • Perform additional essential duties as required.
QUALIFICATIONS:
  • Culinary degree or a degree in food nutrition is preferred.
  • Proficiency in scratch cooking.
  • A minimum of two years' experience in a supervisory or management role within the food industry.
  • Understanding of health department regulations and standards.
  • Proficient in computer applications, including Microsoft Word, Excel, and Google-based platforms for communication and scheduling.
  • Servsafe Certification is a plus.
  • Experience with various specialty diets (vegetarian, vegan, gluten-free, etc.).
  • Familiarity with whole foods, legumes, and diverse cereal grains.
  • Comprehensive knowledge of various nutrition models.
