Key Responsibilities:
Assists the Director in managing the daily operations and planning of the Food and Beverage Department to meet operational needs and achieve monthly performance goals.
Supports the team in reaching operational targets by providing insights and recommendations for strategic plans; preparing and executing action plans; implementing production, productivity, quality, and customer service standards; troubleshooting issues; conducting audits; identifying trends; determining system enhancements; and facilitating change.
Actively engages in the effective recruitment, hiring, orientation, training, scheduling, coaching, and mentoring of team members; communicating job expectations; planning, monitoring, providing feedback, and evaluating job performance; enforcing policies and procedures in line with the Great Wolf Lodge Handbook.
Ensures compliance with training participation in Great Wolf University for team members.Collaborates with Food and Beverage leadership on team development, training, and succession planning.
Guides frontline staff in anticipating and addressing guest needs to ensure maximum satisfaction.
Partners with Food and Beverage leadership in overseeing the preparation, presentation, and timely delivery of all food and beverage items across all lodge venues; ensures adherence to recipe guidelines and standards for flavor, quality, speed, and service.
Works with the Executive Chef and Purchasing Team to maintain organized storerooms, coolers, and freezers, ensuring compliance with health code requirements and First-in/First-out protocols.
Assists the Director and Chef in managing the cost of goods sold through regular reviews of portion control and preparation quantities produced by frontline staff; engages in activities aimed at minimizing waste.
Ensures all Food and Beverage areas consistently comply with local and national food handling, cleanliness, sanitation, organization, and maintenance standards, overseeing the execution of cleaning schedules and internal safety audits.
Collaborates with Food and Beverage Leaders and HR to ensure timely and accurate scheduling and payroll processes.Monitors equipment functionality, performs preventative maintenance, troubleshoots breakdowns, maintains supplies, and coordinates repairs as needed.
Participates in inventory management procedures to ensure budgeted controllable costs are maintained and appropriate stock levels are upheld.
Conducts departmental pre-shift meetings and service evaluations at designated intervals; addresses service components as necessary to meet guest satisfaction scores and company standards.
Assists the Director in overseeing and achieving objectives in Culinary, Stewarding, and Purchasing functions and budgets.Supports Purchasing and Stewarding team efforts related to organizing and maintaining stock levels of all kitchen-related chemicals and cleaning supplies; ensures all Food and Beverage team members are well-trained on safety data sheets, safety, and compliance.
Ensures the lodge meets all minimum score goals for scheduled and unscheduled safety inspections.Ensures all operations comply with regulations from local health and alcohol regulatory agencies.
Basic Qualifications:
High School diploma or equivalent experience
Minimum of 2-3 years of management experience in food and beverage
Familiarity with procurement and inventory control systems, processes, and procedures
Flexibility in scheduling based on business needs, including nights, weekends, and holidays as required.
Excellent written and verbal communication skills
Proficient in P&L management and controls
Strong analytical skills – Ability to understand and respond to key business indicators
Demonstrated experience leading teams to achieve or exceed goals.
Strong attention to detail and time management skills.
Proficient in desktop and similar hospitality software (Familiarity with Microsoft Office Suite, payroll systems, POS).
Successful completion of a criminal background check and drug screening.
Highly knowledgeable in food safety and sanitation practices, rules, and regulations
Experience with guest satisfaction and employee engagement programs and tools.
Preferred Qualifications:
Bachelor's degree in hospitality, business, or a related field
Experience in overseeing and coordinating training programs for Food and Beverage across an entire property
Manager-level certification from a nationally accredited food safety training program
Manager-level certification from a nationally accredited alcohol awareness and safety training program
Effective communication skills and conflict resolution abilities; Proven teamwork
Training and/or experience with hands-on kitchen and bar equipment maintenance
Prior experience in developing and implementing plans to ensure a safe work environment in compliance with relevant regulations (i.e., Ergonomics, Emergency Response, Injury and Illness Prevention, and Hazard Communication Plans)
Physical Requirements:
Able to lift up to 30 lbs.
Able to bend, stretch, and twist
Able to stand for extended periods
