Job Summary:

The Filleter will be responsible for properly filleting various species of fish for production and retail sales, ensuring maximum use of product. The successful candidate will meet the required expectations of all filleters in product quality, recovery, and productivity.

Key Responsibilities:

• Project and apply the Pacific Group Diamond Philosophy (Productivity, Quality, Excellence, and Teamwork) and promote teamwork at all times.
• Properly grade product to ensure quality standards are met.
• Cut all types of fish to minimize loss and maximize product recovery.
• Sanitize work area and equipment before filleting to maintain a clean and safe environment.
• Survey all equipment to ensure proper working order and report any issues to supervisors.
• Handle product properly to ensure maximum shelf life and minimize waste.
• Put away excess product properly to maintain a clean and organized workspace.
• Inform supervisors of any changes or problems that may impact production or quality.
• Clean-up work station and department to maintain a clean and safe environment.
• Communicate quality issues to supervisors and merchandising teams.
• Assist in packing fillet and round orders to meet customer demands.
• Cut and fillet 10-60 lb. fish with a knife to meet production requirements.
• Cut all types of portion orders to minimize loss and maximize product recovery, including bias, block, sandwich, P.B.O., etc.
• Meet all expectations for production and quality to ensure customer satisfaction.
• Perform other duties as assigned by supervisors to support the team and meet business objectives.

Requirements:

The successful candidate will have experience with the utilization of fillet knives, food processing equipment, and food safety practices. They will be able to work in a fast-paced environment and meet production and quality expectations.
