Key Responsibilities- Plan and implement regular and modified menus in collaboration with the culinary leadership team.
- Follow standardized recipes, portioning, and presentation standards, and complete daily production worksheets and waste log sheets.
- Train kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation based on company and regulatory standards.
- Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas.
- Maintain inventory of all supplies within established guidelines.
- Make decisions regarding leftover food products, staying within company guidelines.
- Comply with federal, state, and local health and sanitation regulations and department sanitation procedures.
- A.S. or equivalent experience.
- Minimum of three to five years of progressive culinary/kitchen management experience.
- Fine dining, Executive Chef leadership experience is a must.
- High volume, complex foodservice operations experience is highly desirable.
- Demonstrated success leading an engaged, focused culinary team.
- Comprehensive knowledge of food and catering trends.
- Business systems savvy and reporting acumen.
- ServSafe certified is highly desirable.
