This position directs, implements, and maintains a service and management philosophy that serves as a guiding principle for staff. The Steward Manager assists in achieving specific departmental and organizational goals, fostering relationships with vendors, inventory controls, and cleanliness standards.

Key Responsibilities
  • Ensure all equipment par levels are stocked and secured in kitchens, guaranteeing optimal performance and efficiency.
  • Collaborate with Ecolab and Warehouse Management to establish par levels in each kitchen for cleaning chemicals and sanitizers, ensuring compliance with industry standards.
  • Supervise Culinary and Stewarding safe work practices to minimize accidents, promoting a culture of safety and well-being.
  • Create monthly staff training modules using the Serv-safe model for food safety and sanitation, empowering staff with the knowledge and skills needed to excel.
  • Verify the accuracy of stewarding employee time and attendance reports prior to submission to payroll, ensuring transparency and accountability.
  • Coordinate with the Executive Chef to develop weekly schedules based on event forecasts, optimizing resource allocation and productivity.
  • Have direct oversight of the Hospitality Quality Assurance (QA) program, performing weekly internal audits to ensure compliance with quality standards.
  • Work with the Culinary Administrative Assistant to develop corrective action plans for non-compliance QA reports, addressing areas for improvement.
  • Create catering "pull sheets" based on Banquet Event Orders (BEO), streamlining the catering process and enhancing customer satisfaction.
  • Collaborate with the Executive Chef and Culinary Admin to develop standard operation procedures (SOPs) for the Stewarding department, ensuring consistency and efficiency.
  • Contribute to the development of a food safety, sanitation program in conjunction with the Executive Chef, Culinary Admin, and Hennepin County Department of Health, promoting a culture of food safety and quality.
  • Ensure accurate month-end chemical and cleaning supply inventories are entered and cross-checked, maintaining accurate records and ensuring compliance with regulations.
  • Coordinate monthly stewarding staff meetings to include food safety, sustainability, and sanitation training, empowering staff with the knowledge and skills needed to excel.
  • Establish a communication vehicle for employee suggestions, fostering a culture of open communication and continuous improvement.
Requirements
  • Must be Serv-Safe Certified
  • 2-3 years\u2019 experience as a Food Production Manager or Executive Steward in a volume-oriented food service venue.
  • Must be flexible to work weekends and evenings for all building-wide events as needed.
  • Proficient in software applications, including Microsoft Office, Word, and Excel.
  • Must be a team-oriented individual with solid communication skills.
