Culinary Specialist

Join BlueWater Casino & Resort as a Culinary Specialist and take on the exciting challenge of preparing delicious meals for our guests. As a key member of our kitchen team, you will be responsible for preparing and cooking a variety of dishes, from appetizers to main courses, using standardized recipes and methods of preparation.

• Prepare and cook a variety of dishes, including hot and cold food items, using standardized recipes and methods of preparation.
• Clean and sanitize your work area to maintain a safe and sanitary environment for guests and staff.
• Maintain a neat and orderly food preparation environment by cleaning in a timely manner immediately following preparation.
• Maintain knowledge of food costs and perform job responsibilities in a manner that minimizes waste and improves financial performance.
• Sample food prepared to ensure highest quality levels at all times.
• Maintain correct PAR levels.
• Must be familiar with common culinary terms and methods regarding broiling, braising, roasting, poaching, sauce preparation, and meat carving among other methods.
• Delegates food preparation to other kitchen team members and provides supervision when necessary.
• Prepares individual food items on a consistent basis with little or no variation in terms of appearance and taste as it relates to single food items.
• Maintains ability and willingness to prepare all food items sold by the enterprise according to recipe.
• Possesses or develops high skill levels in all areas of the kitchen and deli and maintains a working vocabulary of common culinary terminology.
• Easily adapts to changes in menu preparation and production methods.
• Maintains responsibility for kitchen safety and sanitation, as well as care of kitchen equipment.
• Practices proper personal sanitary procedures.
• Responds properly to customer preferences and concerns.
• Maintains a dependable work attendance record.
• Communicates in a positive, respectful manner to both internal and external guests.
• Abides by all Arizona State Liquor Laws Title 4, and Colorado River Indian Tribes Alcohol Beverage Ordinance.
• Abides by Guest Service Agreement for BlueWater Resort & Casino.
• Abides by F & B department policies and procedures.
• Performs all functions in accordance with Tribal, Federal, State Health & Safety Regulations, Gaming Regulations, and BlueWater Resort & Casino policies and procedures.

Requirements:

• High School Diploma, G.E.D. and two or three years of related experience in heavy food production within a multi-outlet facility.
• C.R.I.T Community Environmental Health Food Handlers Card and any other required compliance trainings.
• All employees must obtain a valid gaming license from the CRIT Tribal Gaming Agency prior to beginning work and are required to have license renewed annually.
• Must be able to adhere to all BlueWater Resort & Casino and CDC guidelines in regards to the wearing of PPE (including but not limited to a mask and gloves).
• Must attend in-house comprehensive cleaning and disinfecting training on COVID-19 and other infectious diseases.
