Job Overview

We are seeking a talented and innovative Sous Chef to enhance our culinary team at Oglebay. This role is crucial in overseeing various aspects of kitchen operations, ensuring high standards of food quality and presentation.

KEY RESPONSIBILITIES include, but are not limited to:

  • Collaborating with the Executive Chef and Executive Sous Chef to establish and uphold operational standards.
  • Utilizing expertise in food cost management and control measures.
  • Implementing effective labor cost strategies.
  • Assessing the necessary quantities and types of ingredients required for menu items.
  • Processing requisitions for food supplies needed for preparation.
  • Organizing the timing and sequence of cooking tasks to align with service schedules.
  • Supervising kitchen staff in their assigned duties.
  • Ensuring portion control to maintain consistency across dishes.
  • Identifying and addressing challenges such as menu substitutions, food reuse, and minimizing waste.
  • Assisting in the preparation of both hot and cold dishes across all culinary sections.
  • Overseeing staff discipline and performance management.
  • Creating and managing work schedules for kitchen personnel.
  • Adhering to all sanitation and safety regulations.
  • Completing all relevant documentation associated with the role.
  • Coordinating with inventory staff to monitor available food products and equipment.
  • Conducting daily reviews of food inventory.
  • Providing clear communication to staff to ensure smooth kitchen operations.
  • Engaging positively with guests, addressing any concerns or complaints, and fostering a collaborative work environment.

QUALIFICATIONS

A Bachelor's degree in Culinary Arts or a related field from an accredited institution; or one to two years of relevant experience and/or training; or a combination of education and experience that meets the requirements.
