Oven Production Specialist

This position is responsible for operating multiple ovens in the pre-cooked department to produce egg patties, omelets, and French toast. The ideal candidate will have a thorough knowledge of oven operation, product specifications, and cook process procedures.
Key Responsibilities- Maintain the operation of all ovens and pre-heat systems to ensure efficient production.
- Troubleshoot oven issues and assist maintenance in identifying problems.
- Switch pre-heat scrapes during production runs and ensure all Hazard Analysis and Critical Control Points (HACCP) documentation is complete and accurate.
- Assist the lead person in maintaining production levels when absences occur.
- Have acute product recognition and take corrective action if product does not meet specifications.
- Maintain a clean and safe working environment and adhere to Good Manufacturing Practices (GMP) and HACCP guidelines.
- Alert the lead and/or supervisor to condition changes and issues as they arise.
- Work with the lead and/or supervisor to develop improved processing procedures.
- Understand the responsibilities of line workers assigned to particular ovens and monitor their performance.
The ideal candidate will have less than a high school education and possess basic computer skills to work Programmable Logic Controls (PLCs) of the ovens and spirals. They will also have good mechanical skills, including the use of and personal ownership of Allen wrenches, screwdrivers, and other general tools. Additionally, they will be able to work well under pressure, lift up to 50 lbs safely, and work indoors in a warm humid environment for the duration of the shift.
The candidate will also be required to wear the proper Personal Protective Equipment (PPE) for the area and demonstrate all Safety procedures in place. They will be expected to adhere to safe work practices, follow GMP and HACCP guidelines, maintain sanitary conditions, and ensure that product quality is maintained. They will also be required to report to management any conditions or practices that may adversely affect food safety, food quality, or personnel safety.
The candidate will be expected to perform other duties as assigned and ensure regulatory compliance at all times.
