POSITION SUMMARY

Responsible for the overall effectiveness of daily culinary operations. Demonstrates culinary expertise by actively engaging in tasks while guiding the team and overseeing all food-related activities. Aims to consistently enhance guest and employee satisfaction while adhering to the operating budget. Oversees all kitchen sectors to guarantee a uniform, high-quality product is delivered. Tasked with mentoring and developing staff, including direct reports. Must ensure compliance with sanitation and food safety standards.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; 4 years of experience in culinary, food and beverage, or a related professional field.
OR

  • 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or a related discipline; 2 years of experience in culinary, food and beverage, or a related professional field.

KEY RESPONSIBILITIES

Upholding Culinary Standards and Responsibilities

  • Oversees kitchen shift operations and ensures adherence to all Food & Beverage policies, standards, and procedures.
  • Forecasts daily production requirements weekly and communicates these needs to kitchen staff daily.
  • Assists the Executive Chef with all kitchen functions and food preparation.
  • Prepares and cooks a variety of foods, either regularly or for special guests or events.
  • Innovates and develops new applications, ideas, relationships, systems, or products, including artistic contributions.
  • Assists in determining food presentation and creates appealing food displays.
  • Maintains standards for purchasing, receiving, and food storage.
  • Ensures compliance with food handling and sanitation regulations.
  • Performs all duties of kitchen managers and staff as necessary.
  • Recognizes superior quality in products, presentations, and flavors.
  • Ensures compliance with all relevant laws and regulations.
  • Follows proper handling and temperature guidelines for all food items.
  • Operates and maintains all kitchen equipment and reports any malfunctions.
  • Checks the quality of raw and cooked food items to ensure standards are met.

Leading Culinary Operations

  • Supervises and coordinates the activities of cooks and kitchen staff engaged in food preparation.
  • Leads shifts while personally preparing food items and fulfilling requests based on required specifications.
  • Utilizes interpersonal and communication skills to lead, influence, and motivate others; advocates sound financial/business decision-making; demonstrates integrity; leads by example.
  • Encourages and fosters mutual trust, respect, and cooperation among team members.
  • Acts as a role model to demonstrate appropriate behaviors.
  • Maintains employee productivity levels.
  • Ensures employees understand expectations and guidelines.
  • Establishes and maintains open, collaborative relationships with staff and ensures employees do the same within the team.

Achieving Culinary Objectives

  • Utilizes the Labor Management System to effectively schedule according to business demands and track employee time and attendance.
  • Trains staff in safety protocols.

Managing Human Resource Activities

  • Identifies the developmental needs of team members and provides coaching, mentoring, or other assistance to enhance their skills.
  • Improves service by helping individuals understand guest needs, providing guidance, feedback, and individual coaching as necessary.
  • Participates in the employee performance appraisal process, offering feedback as needed.
  • Brings issues to the attention of the department manager and Human Resources as required.

Additional Responsibilities

  • Provides information to supervisors, colleagues, and subordinates through various communication methods.
  • Analyzes information and evaluates results to determine the best solutions and resolve issues.
  • Attends and participates in all relevant meetings.
The salary range for this position is $54,000 to $71,000 annually.
