About the Role
We are seeking an experienced Executive Chef and Menu Plan Specialist to join our team at Duke Dining Services. As a key member of our culinary team, you will be responsible for overseeing the culinary operations of our dining services, including menu planning, food purchasing, and inventory management.
Key Responsibilities
- Develop and implement comprehensive menu programs that meet the diverse needs of our campus community
- Oversee food purchasing, inventory, and quality control to minimize waste and ensure efficient operations
- Manage the planning, scheduling, and supervision of culinary staff to ensure prompt and efficient food preparation
- Maintain and administer standards for food production, including food handling, cooking, housekeeping, sanitation, safety, and employee hygiene
- Oversee catering and special events, including culinary instruction and demonstration
- Collaborate with dieticians to develop healthy meal programs that cater to diverse dietary needs
- Design and implement training programs to address culinary staff development and compliance with industry standards
- Manage budgetary decisions related to culinary operations, including budget development and variance analysis
- Supervise personnel functions, including hiring, performance management, and disciplinary actions
Requirements
- Bachelor's degree in hospitality management, food service management, or a related culinary degree
- Minimum 5 years of progressive culinary management experience, preferably in a bargaining unit setting
