About the Role

We are seeking a highly skilled and experienced Sous Chef to join our team at Hawksmoor Chicago. As a key member of our culinary team, you will be responsible for supporting the Executive Chef in maintaining the highest standards of food quality, consistency, and presentation.

Key Responsibilities
  • Food Quality and Consistency: Ensure that all dishes meet the highest standards of quality and presentation, and that menu items are consistently prepared to the required specifications.
  • Menu Development and Tastings: Participate in the development and refinement of new menu items, and assist in the tasting and evaluation of dishes.
  • Efficiency of Services/Kitchen: Work closely with the Executive Chef to optimize kitchen operations, including workflow, inventory management, and staff scheduling.
  • Product and Service Standards: Maintain the highest standards of product quality, presentation, and service, and ensure that all staff members are aware of and adhere to these standards.
  • Health & Safety: Ensure that all kitchen staff are aware of and adhere to health and safety protocols, and that all equipment and facilities are properly maintained and cleaned.
  • Maintenance of Kitchen Equipment: Ensure that all kitchen equipment is properly maintained, cleaned, and serviced, and that any issues or repairs are reported promptly to the Executive Chef.
  • Leadership and Teamwork: Set an example to staff members when running the pass or working on a section, and provide guidance and support to senior staff members as needed.
Requirements
  • Experience: Extensive experience running high-volume kitchens in Chicago, with a proven track record of success in launching and opening restaurants in the US.
  • Leadership Skills: Excellent leadership skills, with the ability to teach, coach, and train all FOH and BOH employees.
  • Interpersonal Skills: Top management and interpersonal skills, with the ability to work effectively with staff members at all levels.
  • Knowledge: A good understanding of product, company recipes, and systems, including QSR, stock management, and inventory control.
