Overview of the Role:

The Culinary Specialist is tasked with the preparation, organization, and upkeep of all meat, seafood, poultry, and other culinary items prepared in the broiler and sauté sections for The Canal Club restaurant.

Key Responsibilities:

Generate daily supply requisitions for food items and ingredients. Prepare all culinary items following precise recipes or as indicated on customer orders. Conduct visual inspections, select, and utilize only top-quality food items in the creation of menu offerings. Monitor and manage the proper storage of products, particularly specific cuts of meat. Maintain cleanliness and organization in all refrigeration and storage areas, adhering to health department regulations. Ensure all work areas are kept clean and organized, in compliance with health department standards. Perform additional supportive tasks as directed by the Executive Chef, Chef de Cuisine, or Sous Chef.

Required Qualifications:

Education: High School Diploma or equivalent preferred. Culinary training or apprenticeship program is a plus.

Experience: A minimum of 3 years of cooking experience in a comparable environment is required. Experience in broiler and sauté cooking is preferred.

Certifications: Maricopa County Food Service Worker card is necessary.

Skills and Competencies:

Understanding of fundamental cooking techniques, including sauces, stocks, and cooking methods. Familiarity with acceptable sanitation standards. Proficiency in operating kitchen equipment such as stoves, ovens, broilers, and slicers. Ability to butcher fish and/or meat. Basic math skills for recipe preparation. Capability to comprehend and adhere to all Health Department standards. Ability to memorize and execute Resort Standards, AAA Diamond standards, and Mystery shopper standards.

Personal Attributes:

Ethical behavior in all actions. Organizational skills: Maintain a tidy and organized workspace, keeping important job-related documents accessible. Effective communication: Clearly articulate and listen in a thorough and timely manner, proficiently reading and writing in English to accurately document incidents and activities. Professional appearance: Present oneself in a manner suitable for a four-diamond resort (specific grooming standards are available for review).
