Position Overview

The Culinary Operations Supervisor will play a pivotal role in assisting the Executive Chef and Food Services Director in overseeing the comprehensive food production process. This includes the establishment of systematic production techniques, adherence to standardized recipes, portion management, menu creation, and procurement needs. The Supervisor is expected to uphold all client policies and comply with regulatory standards within a senior living environment.

Salary Range: $55,000 - $60,000

Key Responsibilities:

  • Directly manage a team of 10-12 subordinate staff members.
  • Maintain confidentiality regarding company-related matters.
  • Adhere to attendance protocols and comply with company and departmental policies.
  • Ensure compliance with uniform and dress standards.
  • Follow directives from the Executive Chef or Food Services Director concerning additional tasks.
  • Strictly follow recipes for all food production and offerings.
  • Demonstrate proficient knife skills.
  • Be capable of working across various kitchen stations and departments as needed.
  • Provide personal culinary tools.
  • Monitor all kitchen stations to ensure strict adherence to recipes and minimize waste.
  • Train staff to meet menu specifications, sanitation, and food handling standards.
  • Prepare daily production reports and track leftovers.
  • Conduct accurate inventory counts of all food storage areas.
  • Ensure timely production of menu items.
  • Maintain compliance with all HACCP standard operating procedures.
  • Accurately plan and generate requisitions for food ordering.
  • Receive and inspect food products and supplies to ensure they meet quality and quantity standards.
  • Ensure that staff maintain clean and sanitary workstations by practicing a 'clean as you go' approach.
  • Clean and sanitize tables and utensils before and after each task.
  • Identify and prepare all types of meats and other ingredients for service.
  • Execute all cooking methods and knife skills in a timely and efficient manner.
  • Label all prepared items with essential information, including contents, prep date, use-by date, and preparer's initials.
  • Supervise and train lower-level staff in food preparation and cooking techniques.
  • Perform additional duties as assigned.

Qualifications:

  • A minimum of three (3) years of progressive culinary or kitchen management experience is preferred.
  • In-depth knowledge of food and catering trends with an emphasis on quality, production, sanitation, cost control, and presentation.
  • Experience in fine dining establishments, hotels, or country clubs is highly desirable.
  • Background in high-touch customer service environments.
  • Creativity and skills in plate presentation are essential.
  • Experience in high-volume, complex food service operations is highly desirable.
  • Proficiency in computer applications, including Microsoft Office Suite and email.
  • ServSafe certification is required.
  • Must successfully complete background checks and drug screenings.
  • Willingness to engage in resident satisfaction initiatives.
