Head Viennoiserie Specialist

The Peninsula Chicago is seeking a highly skilled and organized Viennoiserie Sous Chef to join our culinary team. As a key member of our Food and Beverage operations, you will play a crucial role in creating a memorable guest experience.

• Oversee the preparation of mise en place for the station, ensuring minimal wastage and maximum use of raw materials.
• Maintain a high standard of presentation for all items produced, and continually develop new standards for the section.
• Produce daily kitchen requirements for every event, ensuring planning and execution of production to maintain high standards.
• Cover other stations when the supervisor is not present, and follow hotel cost control policies and procedures.
• Assist in the effective storage of food items, ensuring a clean and organized kitchen environment.

• Minimum of 3 years' experience in a similar role, preferably in an upscale restaurant.
• Excellent organizational and communication skills, with a strong attention to detail.
• Ability to manage and work in a team, with a creative and motivated approach.
