Embark on a new professional journey and assist us in creating memorable experiences aboard our remarkable vessels. We are seeking committed individuals to join our team as Culinary Supervisors (CS) across various segments of the Galley (Main Galley, Buffet, Pastry).

As an essential member of our Culinary team, our Culinary Supervisors are the specialists operating in diverse culinary settings onboard our ships. They function as lead cooks and authorities, ensuring that only the finest food standards are prepared and served to our guests. Candidates can anticipate a highly dynamic and fast-paced culinary atmosphere, distinct from any land-based experience.

As a CS, you will be accountable for assisting the Culinary Management team in overseeing the operations of food preparation and meal services within your designated area aboard the ship. Furthermore, you will mentor junior staff and guarantee that the operation runs smoothly. Within your section, the CS is responsible for aiding with daily food preparation and meal service activities, ensuring consistency, quality, cost-effectiveness, and the highest sanitation standards are upheld, all in alignment with company and USPH regulations.

ROLE SUMMARY:

  • Ensure the effective management of your area through administration, planning, and daily operational analysis with the Chef and Sous Chef.
  • Uphold company standards for food presentation and service.
  • Lead and collaborate closely with your team of cooks and all buffet staff, along with other personnel.
  • Evaluate the quality of food taste and presentation, holding regular discussions with the Chef and Sous Chef as needed.
  • Submit all food delivery requests for approval by the Chef and ensure that all unused food items are returned to storage daily.
  • Monitor and control food costs within budget by maintaining records of usage, managing waste, portion control, and reviewing consumption daily.
  • Inspect products to ensure compliance with company specifications.
  • Establish and uphold training programs.
  • Collaborate with the Chef and Sous Chef to ensure proper crew selection and maintain budgeted staffing levels.
  • Provide recommendations to the Chef regarding team progress and performance.
  • Conduct nightly inspections of assigned areas to ensure adherence to USPH standards.
  • Set special projects and target levels, monitoring their achievement.
  • Inspire employees and foster an interest in their development to reach their full potential.
To qualify for this position, you MUST meet the following criteria:
  • A MINIMUM of 2 to 5 years of experience as a CS or in a similar role.
  • Experience in high-volume, high-quality international restaurants or 4- or 5-star hotels.
  • Experience handling over 500 servings per day.
  • An industry qualification such as a Diploma or Degree in Hospitality or Food Production.
