Position Overview:
The Culinary Services Supervisor oversees operations at Moffitt Magnolia Campus (MCC), ensuring efficient service delivery and maintaining high standards of guest relations and record-keeping. This role involves supervising staff to meet daily production requirements and providing training and guidance to cafeteria personnel. The supervisor is responsible for maintaining adequate inventory levels and ensuring compliance with food safety standards.
Key Responsibilities:
Inventory Management:
- Implement the first in/first out (FIFO) method for product rotation to minimize waste.
- Ensure all service areas are adequately stocked and prepared for operations.
- Ensure adherence to recipes during food production.
- Direct daily production tasks and communicate objectives to team members.
- Train and mentor staff, providing feedback on performance to the Food Service Supervisor.
- Manage food service operations to ensure timely and safe food delivery.
- Operate cooking equipment according to established guidelines.
- Report any equipment malfunctions or safety concerns to the Supervisor.
- Enforce sanitation protocols for food handling and storage.
- Maintain accurate records of refrigeration temperatures in compliance with regulations.
- Handle cash transactions following departmental procedures.
- Monitor staff compliance with cash handling policies.
- Maintain appropriate cash levels and communicate daily financial reports to the Supervisor.
- Notify the Supervisor of staff absences in advance of scheduling.
- Collaborate with the Supervisor to manage overtime effectively.
- Foster a welcoming and customer-centric atmosphere in the cafeteria for patients and visitors.
- Perform additional duties as assigned.
- High School Diploma required.
- A minimum of five years of experience in food service, with at least two years in an institutional setting.
- Associate's Degree.
- Food Safety Manager Certification.
