Position Overview

  • Prepare culinary items in accordance with banquet event orders, ensuring consistent quality by following established recipes and adhering to production, portion, and presentation standards; complete mise en place and organize stations for service.
  • Initiate the preparation of food items in advance, ensuring that production aligns with anticipated needs.
  • Utilize, maintain, and thoroughly clean kitchen equipment, including but not limited to deep fryers, broilers, stoves, steamers, food processors, mixers, slicers, ovens, steam tables, tilt kettles, waffle irons, and flat top grills.
  • Label all food containers and rotate stock according to established policies, ensuring perishables are stored at appropriate temperatures; assess shift needs, determine necessary preparations, and manage inventory; return unused food items to designated storage areas, ensuring proper covering and dating of perishables; assist in developing strategies to address any food cost concerns; monitor food waste and loss in accordance with policies.
  • Adhere to Four Seasons' Category One and Category Two Work Rules and Standards of Conduct as outlined in EmPact.
  • Collaborate harmoniously and professionally with colleagues and supervisors.

Preferred Qualifications and Skills

  • Availability to work various shifts, including overnight, weekends, and holidays.
  • High school diploma, culinary school education, or equivalent experience.
  • A minimum of two years of culinary or related experience.
  • Advanced culinary knowledge is preferred for this role.
  • Proficient in operating, maintaining, and cleaning kitchen equipment, with strong knife skills and the ability to manage multiple tasks simultaneously.
  • Work schedule may vary based on operational needs.
  • Physical requirements include lifting food cases and materials weighing up to 70 pounds, pushing and pulling, and carrying carts.
  • Regular bending to lift items and supplies is necessary.
  • Maintain 80% mobility during shifts, with 10% of the time spent in continuous standing.
